KETO SOUP & HOW TO MAKE KETO TURKEY SOUP WITH A LEFTOVER TURKEY CARCASS. I hope you saved your turkey carcass because we are making a keto turkey soup out of the broth from your leftover turkey carcass. Turkey soup from leftovers from Thanksgiving is one of my favorite post Thanksgiving Day meals to make.


In this video, I show you how to make keto turkey soup from scratch. We start my making turkey soup stock.

This keto soup recipe is an easy one - great for if you are limited on time during the busy rush of the holiday season. You can freeze it too!


The “rice” in this recipe is from Miracle Noodle. They are a shirataki noodle rice and are all fiber from a konjac yam, so they have zero net carbs and are the ideal replacement for rice in the keto recipes.


KETO TURKEY & “RICE” SOUP



4 tablespoons butter
4 garlic cloves, minced
2 small onions, diced
4 stalks celery, diced
2 small leeks, sliced
1 daikon radish, cubed
3 cups leftover turkey or chicken
4 cups turkey stock or chicken broth
2 packages of Miracle Noodle Rice
½ cup heavy whipping cream
Salt & pepper to taste

Make the turkey stock 1-2 days before.
Prepare the Miracle Noodle Rice according to package directions. Set aside.
In a stock pot, melt butter over medium heat. Add garlic and saute 1-2 minutes.
Add in vegetables and cook for 3 minutes (until almost soft). Add in Daikon radish and cook for 1-2 minutes. Add leftover turkey and turkey stock. Bring to a boil, then lower heat to simmer for 15-20 minutes, until Daikon radish is soft and cooked through.
Remove from heat. Pour in Miracle Noodle Rice and heavy cream. Season with salt & pepper.
